Ok So, we got inspired from some cookies we saw at the Vancouver VegExpo yesterday so thought we would try recreate them with our own twist! They are green so that means there healthy right?…
1 cup butter
Half cup confectioners sugar (icing sugar)
1 tablespoon Matcha green tea powder (we used Foodie’s Matcha by My Matcha Life inc)
2 cups all purpose flour
2 teaspoon vanilla
1/4 Cup Vegan Choc Chips- or more if you desire!
First, Cream the butter in a bowl, then add Icing sugar and dash of salt.
In a separate bowl, sift the flour and Matcha powder and then add to the butter mixture. Add in the chocolate chips and vanilla. Mix together.
Place some plastic wrap (cling film) on to the base of a baking tray. Roll the mixture out on to the baking tray, 1/3 inch thick- pat down with hands. Put plastic wrap (cling film) on top of the Mixture. and place in freezer for 20 minutes.
Heat Oven to 300 degrees.
remove from freezer and take off top layer of plastic wrap and cut in to squares.
Grease a baking tray and place squares on to tray.
Put in oven for around half an hour.
Then they are done! and taste damn good! #happy #vegan #twins
