Ok so stuffed anything is yummy as long as it’s vegan! This is quinoa stuffed tomatos. You can stuff anything in your tometoes, rice, cous cous etc any vegetables you want. We chose the following Ingredients:-
1 cup dried quinoa
1/2 cup edemmame
1/2cup sweetcorn and peas
1/2 tsp cummin
1/2 cup parsley
teaspoon fresh ginger
Siriachi sauce to your taste.
Pre heat oven to 375 degrees
Chop off the top of the tomatoes and then leave upside down on kitchen roll to drain out the water from the tomato, if you don’t do this then the tomato may collapse on you.
Put the cup of quinoa In a saucepan with two cups of water, bring to the boil and then let simmer until the water is absorbed.
Put your edamame, peas and sweetcorn in hot water to heat up
When the quinoa is ready put In a bowl with your vegetables and add in any spices and herbs you like and mix well
Then it’s time to stuff the tomatoes and place in the oven for 30mins! Enjoy!
