Sweet potato quinoa burgers

So today I (Della) had an unexpected evening off work so I figured I would make a nice healthy dinner and sit outside and enjoy the sun. Sometimes I get stuck thinking i want something different, it can be hard to think of new things to cook. Veggie burgers are something that you can adapt and play with, there are lots of different methods to making veggie burgers, you can change the recipe to your liking. I made sweet potato quinoa burgers and served with a salad, that turned out so yummy!

Ingrediants:-

1 medium to large sweet potato

2 cups cooked quinoa

2 cups kale finely chopped

2 tablespoons flax meal mixed with 3 table spoons water

1/2 cup ground oats

3 teaspoons cornstarch

2 teaspoons finely chopped ginger

one teaspoon paprika

pinch salt

teaspoon Dijon mustard

tablespoon lemon juice

2 cloves crushed garlic

method:-

cook the sweet potato and blend it in a food processor so it is a purée cook the quinoa (should be 2 cups). Mix all of the ingredients in to a bowl and stir well with a spoon. Then spoon into burger sized balls and place in the freezer for 20 minutes so they cool down and set a little. Then heat a few tablespoons coconut oil in a pan to fry the burgers 3-4 minutes each side.

It made about 9 burgers
