OK so… Its Blueberry season! and we have both recently become addicted to those small blue round bites of happiness!!
So, off we went to the shops to buy our weekly dose of blueberries all the while wondering what else we could do with them….blueberry pancakes…blueberry muffins…blueberry scones…blueberry crumble…and then it came to me.. .a Blueberry pie!
Apart from the Blueberries we already had all the ingredients in the house!
Its our first time making blueberry pie and it turned out brilliant. It was pretty easy to make…
First you want start with the crust, we used a basic pie crust recipe…
2 cups flour- sieved
2/3 cup Butter- cold.
1/4 cup water
Sift flour and sugar into a bowl, cut in the butter -small chunks, Sprinkle water-1 tbsp at a time, mix with fork. Be careful not to over mix. Press into a ball shape (it’s OK if its crumbly)- halve it and roll out one ball until it is flat and big enough to cover the base and sides of your pie dish. Pat down into the dish and Cook for 10-12 minutes.
5 cups Blueberries
1/3 cup Maple Syrup
1/3 cup water
2 Tblsp Chia Seeds
1 Tblsp Cornstarch
1 Tsp Cinnamon
In a Saucepan, Combine the Blueberries, Maple Syrup and water and cinnamon- bring to a boil and then turn down the heat to simmer for 5 minutes. Once done simmering, add Chia seeds and Cornstarch. Mix and then let sit to cool for 5 minutes.
Then Pour the Filling in the pie crust!-
For the Lattice on top of the pie. roll out the second ball of dough into a flat square and cut strips about 1/2 inch wide and crisscross on top of the pie.
Then put back in to the oven for around 30-35 minutes!!
Once done and the crust on top is slightly golden brown, take out of the oven and leave to cool. Then slice up, plop a scoop of your favorite Vegan ice cream on top (I recommend Vanilla based) and Eat!
