Vegan almond pesto

One thing that i find I crave every once in a while is pesto! I used to love pesto pasta before I went vegan.  But luckily there are vegan versions of everything. Yes im sure it doesn’t taste JUST like normal pesto but it tastes daaaamn good to me!

Ingredients:-

2 cups of chopped basil leaves i used 2 x 28g packs

1 cup of shaved almonds

1 tablespoon vegan parmasan cheese

1 garlic clove

Dash of salt

1/4 cup of oil, maybe a little more if needed

Method:-

Place all ingredients in the food processor and blend!

Interesting facts :-
Basil leaves contain essential oils that have been found to have anti-  inflammatory functions. Also basil has no cholesterol and is high source of vitamin A which is essential for vision! – I wonder if I ate lots of basil when I was a kid if I would still need contact lenses now??? Lol. And of course basil is a good source of iron! Which is what all non vegans will love to know since they are always so curious as to where we get out iron from.
