Homemade Vegetable soup

On a recent trip to England on a cold and rainy day we felt in the mood for soup! So we went to the store and bought a load of vegetables to make a vegetable soup:-)


4 carrots

1 head of broccli

1 small onion

1 large sweet potato

1 zucchini (courgette)

2 leaks

1 cube vegetable stock

splash of chilli flakes and paprika


Boil the carrots, broccoli, sweet potato, leaks and lightly sauté the zucchini and the onion add whatever spices you desire we added some chilli flakes and paprika which gave the soup a bit of a kick. In a separate pan place the vegetable stock cube and 5 cups of water and bring to a simmer. When all the vegetables are cooked place the vegetables  in the blender with the vegetable stock, you may need to do it in two or three sections depending on how large your blender is.

This created about 8-10 portions of soup. Omg did it taste good! Our meat eating dad said it was the best vegetable soup he’s ever had, I’m sure there is no bias there! You may also like to grate a bit of vegan cheese on top. Being in England we used violife!

    As I personally watched this soup being made and then had the pleasure of sampling a bowlfull or two, I can testify to its great taste and the most satisfying feeling of having just consumed a very very tasty vegan soup!
