Vegan Sun-dried Tomato and Pepper Quiche (Tofu).

Another first! This was our first attempt at a vegan style Quiche and it turned out great! Its almost thanksgiving and that means Potluck time! We came across this great recipe for Quiche and adapted it to how we like it!
When ever we have a potluck to go to we like to take the opportunity to be creative and try something new out!

Here’s the ingredients you will need!


1 cup whole almonds, ground into flour
1 cup gluten-free rolled oats ground into flour
1 Flax egg- 1 tbsp ground flax with 3 tbsp water- mix
1 tsp rosemary (or other herb)
1/2 tsp salt/ pepper (optional)
1 tbsp coconut oil or olive oil
1-2.5 tbsp water, as needed


1 block (14-oz) firm tofu
1 tablespoon coconut oil or olive oil
1 Small onion, thinly sliced
3 large garlic cloves, minced
1/2 cup fresh chives, finely chopped
1/2 cup fresh basil leaves, finely chopped
1/3 cup oil-packed sun-dried tomatoes, finely chopped
1 cup baby spinach
2 tbsp nutritional yeast
3/4-1 teaspoon fine grain sea salt
Black pepper, to taste

Turn oven on to 375f
Grease pie dish. Set aside.
Press the tofu- wrap in kitchen roll or a t-towel and place a heavy item on it to press the water from the tofu.

Begin with the crust… Put 1 tbsp ground flax in a small bowl and mix with 3 tbsp water. Set aside.

In the food processor grind the almonds until a flour consistency-or as close as you can get it. Do the same with the Gluten free (Wheat free) oats, add in any herbs and spices you may want to use.
Place both flours in a large bowl and then mix in the flax egg and the oil, You may need to mix in the water at this point to make the mixture stick together.

Place the crust mix in to the pie dish (cake tin) and press down around the base and the sides firmly.

Poke a few holes in the crust so the air can escape.
Place crust in the oven for around 15 minutes or until golden brown.

For the filling:

Break the tofu in to pieces in to the food processor and blend, i found the mixture wasn’t creamy enough so added a bit of almond milk.

Slice onion and crush garlic and pepper and add to skillet, fry in a little oil, Add in any herbs, nutritional yeast and spinach, salt and pepper.

Once cooked, stir in the tofu mixture and pour on to the crust mixture and smooth out.

Put in oven for 35-40 minutes.

Once out of the oven , leave to cool down, slice and Eat! #HAPPY #VEGAN #TWINS
