Sweet Potato Patties

So, right now we are following a Vegan “Paleo” diet (Obv no meat), basically to get healthier. Since living in Vancouver it has been a lot easier to find yummy vegan treats which is totally awesome but unhealthy as well. It’s easy to get off track and stuck in a rut with food. So here we are trying to boost our health once again. We are not saying we are going to be eating nothing but salad and vegetables. We like to challenge ourselves and be creative with our foods and start to cook more for ourselves again instead of eating out so much. As a “Paleo” vegan you cannot eat grains or legumes in addition to the restrictions you have as a vegan. We are allowing ourselves to eat fresh lentils though (as an extra protein source) soaking them overnight and also sprouting them. Its going to be a challenge for sure. Our first creation is sweet potato burgers with peas and sweetcorn.

1 large sweet potato

1/2 an onion

1/2 cup peas

1/2 cup corn

1/2 Bell pepper

add any spice you may have-We just put a little of every spice i had in the cupboard

Method:

Cut the sweet potato into chunks and coat in olive oil. Put into the oven and roast for about 45 minutes, until soft. Dice the onion and pepper, and fry until soft. In a bowl, Add boiling water to the sweetcorn and peas (if you are using from frozen). Once the potato’s are cooked, Place everything in a large bowl together and mash mash mash! The mixture will be soft so then leave to cool and roll into balls,place on a place and flatten in to a patty shape! Usually makes 6-7 burgers and then put in the freezer for at least 30 minutes before frying .
