So recently we have been having Chia pudding for breakfast most mornings, which is great its healthy and full of firbre and nutrient dense, but we fancied a change! We were stumped with ideas for breakfast! We couldn’t really stick to the Paleo AND Vegan diet 100%, Chia Pudding was starting to get a tad boring… (as much as we love it!)
So we both found out about this open day for the Vancouver School of Holistic Nutrition (from when we were at the Veg Expo In Vancouver). It was a great day with several talks from teachers at the school and also cooking demonstrations! Including the Buckwheat Granola recipe from “Beyond Nourished”.
Raw Sprouted Buckwheat Granola was never something we had heard of before ! We got to sample it at the demonstration and loved it so decided to adapt it and add our own flare to it.
To make it:-
Grab a cup of buckwheat and soak in water for 8 hrs or over night (approx 4 cups water). Then rinse thoroughly and pat dry with a paper towel.
The next part is the most fun as you can add anything you like to it! We used 1/2 cup walnuts, 1/4 cup craisins , 1/4 cup unsweetened shredded coconut flakes, 2 tablespoons maple syrup, 4 dates chopped small and then mix everything in a bowl. VOILA!
SO simple, if you have a dehydrator you can spread on to the base and leave to dehydrate for 8+ hours. You can also put in the oven on a VERY low heat to slowly cook and they will become harder and more crunchy.
Additional ingredients you may like-Hemp/flax seeds/ peanut butter/almond butter, Chocolate chips, peanuts, strawberries, frozen raspberries, raisins,lemon juice.
