Recently we went to a fruit-luck, not a pot luck a fruit-luck! We figured… “why just fruit?” That could be kinda boring maybe we should take something a little more interesting 😀. So we made a super simple blueberry pie. We didn’t have enough time to make a pastry crust and wanted it to be healthier as it was supposed to be more fruit based. So we used Almonds and dates as the base for the crust.
1 x cup dates
1 x cup nuts we used mostly almonds also some walnuts
4 x cups blueberries
1/4 x cup maple syrup
1 x tablespoon water plus 1/4 cup water
1/2 teaspoon cinnamon
2 x tablespoons cornstarch
Place the cup of dates and the cup of almonds in the food processor and blitz until combined, I put in about a tablespoon of water just to bring the mixture together a little more and then spread it all into the base of the pie tin. This is your base to the blueberry pie. Pat it down in to the cake tin and then put it in the freezer whilst making the filling just to help it set a little.
In a saucepan put 4 cups of blueberries, 1/4 cup maple syrup, 2 tablespoons cornstarch, half a teaspoon cinnamon and 1/4 cup water on low to medium heat. The mixture becomes slightly thick and looks like it does in the picture! We pressed down on some of the blueberries as we mixed to make them pop! When it is heated and mixed well simply pour on top of the base and leave to cool slightly before serving, we ate ours cold.
Thats it!Super easy!
Safe to say our dish went down a treat!
Blueberries are a great fruit with many health benefits, they are high in antioxidants and low in fat, they have been shown to improve memory. Blueberries also have a low glycemic index ans high in Antioxidants! So eat away! its good for you!
