This is something we have never made before and it is such a simple thing to make. who would have thought black bean brownies would be a thing? We recently payed a visit to the naturopath who told us we should eat more protein since we are vegans which we have heard before and already knew ourselves. One cup of black beans has 15g protein so that makes me feel great when I am eating my delicious brownies :-).
2 cups black bean brownies
3/4 cup coco powder
1/2 cup sugar
2 table spoons agave
2 flax eggs
1.5 teaspoons baking powder
1 tsp vanilla extract
3 tablespoons coconut oil melted
chocolate chips- however many you like
Preheat oven to 350 make 2 flax eggs in the food processor and leave to settle, rinse the kidney beans put in the food processor along with all the other ingredients except chocolate chips and process until smooth it should be a thick sticky consistency like a frosting. Add in any additional ingredients you may want i.e choc chips mix in by hand. Then put in to lightly greased muffin tins or a cake tin and place in the oven for 25 minutes. They should be gooey type brownie.
They are so delicious! just the right consistency, like a soft cake the chocolate chips were a great add in. You could also add things like walnuts, shaved coconut or raisins.
