Snickerdoodle choc chip cookies

So we tried to post this a long time ago (well, back in December 2016) but we were having technical issues! So just found this in our Drafts!… So lets pretend its before Christmas time again, Yay!

We wanted to make something Christmassy so we made some snickerdoodle choc chip cookies. They turned out so well! Nice and fluffy/cakey! And of course we added chocolate chips since whats a cookie with out chocolate chips?

We have never made snickerdoodle cookies before and it just so happened that we had all the ingredients in the cupboard…well would you fancy that!?

We were thinking earlier today that we want to start buying some Christmas decorations but it’s a little bit to early for that, so first stop, Christmas themed baking! Since its never to early in the year for baked goods.

There’s something about the name snickerdoodle that makes them so appealing, you could just call them cinnamon sugar cookies but doesn’t quite have the same ring to it does it?

1 and 3/4 cup all purpose flour (can use whole wheat too)
3/4 cup sugar
1/4 cup corn starch
1 tablespoon baking powder
8 tablespoons vegan butter
1 teaspoon vanilla
2/3 cup chocolate chips

Cinnamon sugar coating:
1/2 cup sugar
2 tablespoons cinnamon

Mix the flour, baking powder and corn starch together in a bowl.

In a separate bowl mix the butter, sugar, vanilla and milk.

Then add the dry mixture to the wet mixture a little at a time whilst stirring.

Add in the chocolate chips and mix well.

In a separate bowl mix the sugar and cinnamon together and pour out onto a plate.

Roll the cookie dough into balls and roll them in the sugar mixture.

Place in the oven at 350 degrees Fahrenheit for 12 minutes.

Take out and put on plate and leave to cool before serving!
