Well, we fancied making a peanut butter style dish and we had a friend show us a photo of a vegan Pad Thai dish that looked amazing. So we went and bought some zucchinis and grabbed the spiralizer from the cupboard. Our older sister was kind enough to give it to us! Spiralized zucchini is such a great invention. So much healthier than pasta! It’s a green vegetable after all!
So two zucchini’s in hand, it was time to raid the fridge and come up with a creation!
2 x zucchinis (makes a lot more than you think)
1/2 a yellow pepper
2 heaped table spoons of peanut butter (HEAPED I SAY!)
2/3 can coconut milk
1 cup of dices tomatoes (from a can)
2 small sweet potatoes
1/3 block of tofu
Firstly, spiralize the zucchinis into a big bowl and set aside. Then peel and chop the sweet potato into cubes and boil on a medium heat for about 10 minutes. Chop the onions and yellow pepper and lightly saute, then saute the tofu separately. Pour the diced tomatoes, coconut oil and zucchini noodles in to a large fry pan on medium heat, mix in the peanut butter, when all the other vegetables are cooked toss them in with the zucchini noodles, the tofu we added in last. Keep mixing until everything is well blended and hot and then serve!
This dish was so simple to make and truly tastes delish! you can adapt it any way, just use what vegetable you have in the fridge! this mix is great though!
Zuccini has a very low calorie content and contains no saturated fats or cholesterol, the peel is also a great source of dietary fiber.
