Banana Bread.

What to do with those ripe bananas in the cupboard!? Make Banana Bread! We recently tried some local banana bread from a cafe just up the road and it was delicious!

So when we had some extra banana’s in the cupboard we thought we should make our own!

We already had all the ingredients in the house so we just had to right!?

Banana’s are so versatile, and healthy too. They are  High in potassium, help boost energy levels and contain vitamin C and Magnesium.

Ingredients:

2 cups all purpose flour

just over 1/2 cup coconut sugar

3 ripe bananas (mashed)

1/2 cup butter or margarine

1/2 tsp baking soda

2 tsp vanilla extract

1/2 cup chocolate chips

1/2 cup walnut pieces

1/4 tsp cinnamon

1/4 cup non dairy milk

2 tsp apple cider vinegar

First, add the milk and the apple cider vinegar to a small bowl, mix and leave on the side.

In a separate bowl add the flour baking soda and cinnamon and mix.

In another bowl add the butter and sugar and mix together, add in the mashed bananas vanilla and the milk mixture and combine.

Add the wet mixture to the dry mixture , add in the walnuts and the chocolate chips and combine well.

Pour the mixture in to the loaf tin, the mixture will be thick. Put in the oven for 70 minutes or until a knife comes out clean. Leave to cool before eating.

This banana bread is so yummy! nice and soft and moreish just they way it should be, Enjoy!
