OH WOW! These brownies were surprisingly good for brownies made from chickpeas. Who’d of thought it!?
When visiting the U.S.A on vacation when we were kids there were two treats we always insisted on buying… Reese’s pieces and Oreo’s. Now we are vegan we can’t eat Reese’s pieces but we can still eat Oreo’s! HELL YES! this is great news for vegans 🙂
This year we were able to go to the Christmas vegan potluck hosted by Meetless meet up! It was great! there were 60+ people there which was only half of the amount of people that turn up for their thanksgiving potlucks! There was tonnes of great plant based foods. These potlucks are great for us as its nice having so much variety.
We wanted to make a treat but also didn’t want it to be something super unhealthy. We have been eating lots of chickpeas recently since they are high in protein and very versatile, hence these brownies seemed like the perfect choice!
2.5 cups of cooked chickpeas
2 cups of dates
2/3 cup coco powder
2/3 + 2 tbsp oat flour (blended oats)
Dash Himalayan salt
1/2 cup melted coconut oil
3/4 cup milk of choice
10 Oreo’s of choice
Pre-heat the oven to 180°C/ 350°F
First, blend the dates in the food processor, add chickpeas coconut oil and milk then blend until the mixture is smooth. Pour this mixture into your mixing bowl, add the oat flour, coco powder and salt. Mix to combine and pour into cake tin then crumble or place the Oreo’s on top! Bake in the oven for 20-25 minutes! Prick with a knife and if it comes our clean then it is ready.
Thats it, so easy!
It was hard not to eat all these brownies to ourselves! so simple and delicious. and made from chickpeas so healthy…right?
