OK so this is one of those dishes we kinna threw together! We had the puff pastry, onions, cashews tomatoes, spices already. So to make a tart seemed a good idea!
Ingredients you’ll need:
Pasty- puff or filo
2 medium onion
1 tbsp sugar
One cup cashews
2 tbsp Nutritional yeast
1/4 cup water
2 tbsp lemon juice
2 tsp onion powder (or 2 cloves of garlic if you prefer)
1/2 cup Walnuts
1/4 cup oil 1/4 cup (add more if needed)
2 cloves garlic
2 tbsp nutritional yeast
1 tbsp lemon juice
We cheated with the puff pastry and used store bought! It usually comes frozen, so leave out to de-frost for 4-6 hours or over night. We’ve never actually made our own puff pastry before, it can be a little tricky from what we’ve heard but we will defiantly give it a go in the new year and post about it on our blog!
If the pastry is frozen, take out of freezer and place on a plate or a piece of parchment paper and put in the fridge overnight or 4-6 hours until completely thawed.
To make the onions: chop onion, add to the saucepan with a teaspoon of butter, leave on a low/medium heat and place lid on top. Let stew for up to 20 minutes, checking occasionally to stir. Once the onions look soft and cooked, add the tablespoon of sugar and stir well, cook for a further 5 minutes until caramelized.
When the onions are stewing, you can start making the pesto, combine all pesto ingredients in a food processor until fine and comes together. If it is too dense then add more oil. Do a taste test and adjust to your taste buds! put aside for now until you are ready to assemble the tart.
For the cashew cheese, add the cashews to the Vitamix (high powered blender is best but you can make it in any blender or even a food processor) add the water, we added half of the water first and blended then added the rest and blended stopping every once in a while to scrape down the sides to ensure all the cashews are being mixed in. Once blended well, add in the rest of the cashew cheese ingredients and pulse to blend in, If using the Vitamix it only takes around a minute or less until it is nice and smooth.
(The nutritional yeast adds a nutty cheesy flavour, you could add any herbs and/or spices to the mixture too)
Roll out the pasty to a flat rectangle or square until thin, ours was almost the size of the baking tray we were using. Add on all the toppings. We put the pesto and cashew on as a sauce, then the caramelized onions and chopped up the little cherry tomatoes and sprinkle on top. Place in the oven for around 20 minutes until the pastry is cooked (check the bottom of the pastry is slightly brown).
We haven’t made a puff pastry tart in a long time, we used to make this dish when we were teenagers, if you use the store bought pastry its actually quite simple, you can add whatever toppings you like and pop in the oven.
