We were popping over to a friends house and wanted to bring a lil treat. We were still feeling the festive spirit so wanted something yummy with cinnamon/nutmeg. We were thinking banana loaf with cinnamon but we have done that before. So we decided to switch it up a bit with this Chocolate Chip Spice loaf! nom nom…
1/2 cup almond milk (or any other milk)
1 small plain/vanilla daiya yoghurt (150g, around half cup)
2/3 cup coconut sugar
1/3 tsp nutmeg
1/8 tsp clove (we just shake a bit in)
1 tsp cinnamon
1.5 tbsp flour
1 tbsp oil
2 tsp vanilla essence
1/4 cup almond milk
1 1/4 cup flour
1 1/2 tsp baking powder
1/4 tsp baking soda
1/2 cup semi sweet chocolate chips (dairy free)
Place the top section of the ingredients in a saucepan and mix on medium heat until starting to bubble. Try get rid of any lumps, turn off the heat and add the vanilla and 1 tbsp of oil and the 1/4 cup almond milk and give it a good stir.
Preheat oven to 350F.
In another bowl, mix the flour, baking soda and baking powder . Add it to the wet ingredients and combine.
Grease the loaf tin and pour in the mixture and spread out evenly, put the chocolate chips on top and place in the oven for 25 minutes. Poke the loaf with a sharp knife and if it comes out clean then it is ready! if not, put back in for a further 5 minutes.
Leave it to cool, this loaf is so yummy still warm though!
We found 25 minutes was long enough to keep is soft and moist, we added the choc chips cos we are chocoholics but pecan’s or other nuts would be great too!
