Healthy Banana muffins!

Looking for a healthy and delicious snack! These muffins are a great idea, we make them smaller snack sized but you could make bigger ones too and have for breakfast.

They are high in protein, you could add a scoop of Vega protein powder to the mixture too. You can add raisins or choc chips depending on how healthy you want to be!

 

Ingredients

3 Banana’s

1 flax eggs

1 tbsp baking powder

1tsp baking soda

3 tbsp oil

1 tsp vanilla extract

1/4 cup coconut sugar

1/4 cup maple syrup

1 tsp cinnamon

3/4 cup almond milk

1 1/4 cup almond meal (almonds blended in to an almost flour consistency)

1 1/4 cup oats

1/2 cup vegan choc chips/ raisens

Method

Pre heat oven to 375F, grease your muffin tin or line with the paper muffin holders.

Make the flax egg first in a cup or small bowl, 1 tbsp ground flax to 3 tblsp water and mix together, leave to soak for a few minutes.

In a large bowl, mash the banana baking soda and baking powder. Add vanilla, coconut sugar and maple syrup and cinnamon and flax egg. Mix very well and then add the almond milk and combine.

Stir in the almond flour and oats , if the mixture is too wet, add more oats. Stir in the chocolate chips/ raisens and walnuts

Pour in to the muffin holders, fill each holder to the top.

Put in the oven for 35 minutes or until, a little brown and prick a fork/knife in the middle and should come out clean.
