We were shopping in Costco for the basics, toilet paper, Vega protein powder etc…. when we came across edamame pasta! never tried it before it actually looks like long blades of grass before you cook it. With 21 grams of protein per pack and 170 calories it’s a great choice for a high protein meal. We decided to make a cashew sauce that was super simple and easy.
1/2 cup cashews
2 cups water
half a lemon
2 tablespoons nutritional yeast
2 teaspoons cornstarch
Basically put it all in a blender (Vitamix) and puree then put it in a saucepan and add the cooked pasta and stir with the veg you want.
There are many ways to have edamame pasta we also tried it with a tomato sauce and with veg and bean sprouts
