When we were vegetarian we used to love eating quiches they were great and you could find lots of different kinds, since turning vegan we have only made vegan version once or twice. This is the first quiche we have made in a long time and it was so easy to make. You can also make your own vegan pie crust which is easy but just takes a little more time. We bought the pie shell from Whole foods (on sale for half price! woohoo)
1 vegan pie crust
1 organic firm block of tofu
1x bell pepper
1/2 yellow onion
1 x zucchini
Press the block of tofu to take out some of the water. Pre-heat the oven 375 degrees and cook the pie shell for 10 minutes. While it is in the oven chop and cook your vegetables and put in food processor along with the firm block of tofu and pulse so the mixture is combined then take out the pie crust from the oven and pour in the filling put back in the oven for 30 more minutes
This dish is another one which can be easily adapted to your preferences, change up the vegetables you put in next time add some spices or vegan cheese etc.
Tofu can be really bland and boring if its not prepared the correct way but this pie was perfect, it reminded us so much of egg quiches we used to eat but so much better knowing nothing had to suffer in the process!
